Carlos Tenorio and Agustin Delgado scored a goal on both sides of the interval to give Ecuador their first three points in the group.
Ecuador trail Group A leaders, who beat Costa Rica 4-2 in the opening game, on goals scored while Poland share last place with the Ticos on no points.
Tenorio headed Ecuador in front after 24 minutes after being set-up by the resourceful Delgado.
Poland failed to break through the resilient Ecuador defense and gave a dismal performance throughout the game.
Delgado notched Ecuador's second in the 80th minute after a brilliant play that was capped by Ivan Kaviedes squaring to the LDU Quito player who notched home into the empty net.
Poland will have to do better when they face favorites Germany on Wednesday while the South Americans will be looking to secure their knockout stage berth by beating Costa Rica on Thursday.
